Rooted in the rich traditions of pre-partition Punjab, the restaurant is a tribute to a time when food, culture, and community came together at the table, offering guests an immersive journey through heritage, flavors, and hospitality.

LOCATION - JERSEY CITY

We are seeking a skilled and experienced tandoor chef to deliver perfectly charred breads, succulent kebabs, and authentic clay-oven dishes

Key Responsibilities

• Operate and maintain the traditional clay tandoor oven, managing heat levels and coal or gas settings to achieve ideal cooking temperatures for each item.
• Prepare and bake a full range of tandoori breads including naan, roti, kulcha, garlic naan, and laccha paratha with consistent texture and char marks.
• Marinate and cook a variety of tandoori dishes including chicken tikka, seekh kebab, boti kebab, fish tikka, and paneer tikka to order with authentic smokiness.
• Prepare fresh marinades using yogurt, spices, and herbs; ensure meats and proteins are properly marinated for the right duration to maximize flavor and tenderness.
• Clean, maintain, and monitor the tandoor oven daily; manage coal or gas usage efficiently and ensure the oven is preheated and ready before each service.
• Follow strict food hygiene and safety standards, including proper handling of raw meats, allergen management, and maintaining a clean and organized workstation at all times.

• Proven experience as a tandoor chef (3+ years preferred)
• Strong knowledge of tandoori marinades, spices, and cooking techniques 
• Expertise in operating and managing traditional clay tandoor ovens 
• Ability to handle high-volume service under pressure
• Valid food handler certification or equivalent 
• Good understanding of dietary restrictions and allergens 

• Experience with both coal-fired and gas tandoor ovens
• Knowledge of Mughlai and North Indian cuisine traditions
• Ability to prepare vegetarian and vegan tandoori options
• Prior experience in a restaurant or hotel kitchen
• Basic understanding of cost control and portioning
